Just wanted to pop in to memorialize a meal I had last night... I had a salmon filet in the fridge I needed to use, and I've been craving soup, so I decided to make salmon chowder. It was SO good, I wanted to write down how I made it to refer back to again...
I made it a single serving, so I started with some chopped celery, onion and carrot. All told, it was probably a little over 1/2 cup. I sauteed that in some olive oil, adding the cubed salmon halfway through that process so it could cook. (I always salt and pepper as I saute.) I added a tablespoon of flour to that and let it form a roux, then added a half cup of milk. I added a few shakes of Old Bay seasoning. At this point, I got the bright idea of adding a big handful of Schwan's kale and vegetable mix I have in the freezer (this stuff is good in a lot of stuff!) Once it rewarmed and started to bubble, I added another half cup of milk and a little more Old Bay. It was delish! I ate it with a slice of toasted rye bread...yummy! AND it was so pretty, I took a photo!
